In this episode of Ban Tei’s Sacred Flavors, Ban Tei prepares a delicious pairing of crispy fried fish and rich sesame rice. The fish is seasoned with turmeric, black pepper, lemon and salt before being fried until beautifully golden.
For the rice, Ban Tei roasts sesame seeds over the fire and grinds them into a paste, combining them with rendered pork fat, onion, garlic, ginger and turmeric before slowly cooking everything together. Simple ingredients, traditional techniques, and another beautiful taste of Northeast India.
